Don’t know what to do with that can of salmon your mom gave you years ago? We have the perfect recipe. Here is our Salmon Fritata a camping recipe under 500 calories.

Ingredients :

  • 1 can of salmon (we use home canned salmon from Alaska but store bought will do)
  • 1 small yellow onion
  • 3 cups of raw spinach
  • 1.5 cups of mushrooms
  • 6 eggs
  • 10 small balls of mozzarella
  • 1 red bell pepper
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Cast iron skillet or covered pan

Step 1:

Chop the onion, mushrooms, and red bell pepper. Saute’ onions in a cast iron combo skillet until translucent, apx 4-5 minutes. Add in mushrooms and red bell pepper.  Saute’ until soft in texture. Add in spinach and saute’ until it wilts and is 1/4 the original size. Add in canned salmon and cook until warm. Add salt and pepper to taste.

Step 2:

Whip 6 eggs in separate bowl. Pour over sautéed mixture. Cut mozzarella balls in half and evenly spread over eggs. Place lid on top.

Step 3:

Cook mixture for 20-25 minutes or until eggs are fully cooked and cheese is melted. If you place a toothpick in the middle, it should come out clean, not gooey.

Step 4:

Serve and enjoy!
