This is great on a hot day when you want something light and healthy. This high fiber salad is very filling and has less calories than most salads we enjoy. Here is our secret recipe for Southwest Salad.


  • 1 avocado
  • 1 cucumber
  • 1/2 bunch of cilantro
  • 1 small can of corn
  • 1 can of low-sodium black beans
  • 1 red bell pepper
  • juice of 1 lime
  • 1 cup of cherry tomatoes
  • 1 tsp of garlic salt
  • salt and pepper to taste
  • 1 tsp red peper seeds (optional)

1. First chop avocado, cucumber, cherry tomatoes, and red bell pepper and put ingredients into a bowl:

2. Add corn, black beans (rinsed), lime juice, chopped cilantro, garlic salt, red pepper seeds, salt and pepper. Stir all the ingredients.
