When we’re camping, we don’t always have time to cook an hour long meal. We’ve been creating recipes that are quick, healthy and well balanced! We get busy but everyone has to eat. This is a great protein rich meal. Takes only 20 minutes to make and has less than 500 calories per serving. Here is a super easy garlic shrimp with mushrooms recipe.

Ingredients

    • 8 large shrimp
    • 1 cup mushrooms
    • 3 -4 garlic cloves
    • 1/2 medium yellow onion
    • 1 tbsp butter
    • 1 tbsp olive oil
    • 1/2 cup white rice
    • 1 cup water

Step 1: Cook the Rice

Put rice and water in rice cooker and let it do it’s thing. We have a mini rice maker called mi; It’s a mini rice cooker great for two people and it only takes apx 20 minutes to cook. The time will vary depending on the type of rice you choose and the rice cooker you use.

Step 2.Cook the Mushrooms

Dice mushrooms and onions and saute in olive oil until the mushrooms turn a darker color apx 5-8 minutes.

Step 3. Cook the Shimp

Saute garlic, butter and shrimp until shrimp are pink throughout, apx 2-3 minutes on each side.

Step 4:Serve and Enjoy!
